Generally a DC supply is generated either by batteries or Converters(AC to DC). But if reliable DC source is available and a voltage level of other than that of source is required DC-DC Converters have been used, like we have ups 125V DC source (Produced by batteries and converters). This 125 VDC is further used for generating 48VDC and 24VDC through DC-DC converters for reliable application on process computers.

Do you have any advice for people relative to buying or using DC-DC converters?

Please take care of extra ratings and noise factors, because, if your system is sophisticated, the noise may damage the electronic components. Equally, if the converter is designed with no extra power rating, it will become heated over and again and will damage and services will suffer. Please always purchase from reliable sources/companies brands to avoid frequent service interruptions.

Look for efficiency versus power output graph. Spec sheets normally show the peak efficiency which is at a particular power output. A converter with a comparatively flatter graph is better than a converter with a higher peak efficiency at a particular power output and drops off steeply.

I like to choose the ones which supply at least 30% more current than I need. Always leave plenty of physical breathing room for cooling and separate them from anything which can be affected by RF noise.

Please do not select always cheap solutions. Go for reliable manufactures. Otherwise you may damage your costly, sophisticated equipment for which you are using DC-DC converter based power supplies.
