Ingredients
1 medium Golden Delicious apple peeled and cored
1 3 pound butternut squash or other winter squash like pumpkin or acorn
1 14 ounce can vegetable broth
honey and water to adjust taste and texture
Directions
Preheat oven to 350 F. Cut the squash in half, remove the seeds, and place on a baking sheet cut side down in oven for 40 to 60 minutes until a fork can be easily inserted into the squash. Cool.
Cut the peeled and cored apple into small chunks.
When squash has cooled, spoon out the flesh into a blender, add the apple pieces, and vegetable broth and blend until smooth. This step will have to be done in batches unless you have a very large blender.
Place the blended mixture in a pot, and simmer for about 10 minutes adding water if too thick and honey if not sweet enough.
