Green Meatloaf

Ingredients

  • cup plain breadcrumbs

    2 pounds ground turkey or ground beef

    1 egg, lightly beaten

    cup freshly grated Parmesan cheese

    1 clove garlic, minced

    1 small onion, minced

    1 pound fresh spinach, washed, dried, and coarsely chopped

    1 tablespoon Worcestershire sauce or more to taste

Directions

  1. Preheat oven to 350 F.

  2. In a skillet, cook chopped spinach until reduced by half. Let cool and drain.

  3. Mix all the ingredients together, shape into a loaf and then place on a baking pan.

  4. Bake 45 to 60 minutes until the internal temperature is 160 F and the outside is browned.
